 These classic s'mores cookie bars are ooey-gooey perfection with a graham cracker cookie dough crust filled with marshmallow fluff and chocolate squares.

Hello friends! Do you ever get fixated on one thing? Like an intense craving for something and that’s all you can think about for days? This happened to me recently with S’mores and the results of that craving were these s’mores cookie bars.

I’ve been craving s’mores for well over two weeks. We visited my in-laws at their camping site for a day and the kids put together a fire pit and there was roasting of marshmallows and making of good ole s’mores. But unfortunately for me on that day, I was fasting (as it was Ramadan) and was unable to indulge in the festivities. Bummer right? That’s how my fixation with s’mores started and last weekend I settled the score with these bars and boy just looking at them satisfied my s’mores craving.

This homemade strawberry cheesecake ice cream recipe is creamy delicious, slightly tangy and bursting with sweet strawberries!! Perfect for summer!

Happy August friends! It’s time for another summer ice cream recipe! After these strawberry coconut cheesecake popsicles, I realized you guys love strawberry + cheesecake combination as much as I do. So I am bringing you this homemade strawberry cheesecake ice cream recipe to add to your summer recipe list!! It’s creamy delicious, slightly tangy and bursting with sweet strawberries!!

What makes a cheesecake delicious? The crunchy crust and tangy filling combination …in my opinion. So this ice cream starts with a cream cheese and greek yogurt base that is infused with a fresh strawberry sauce. You get sweet, tangy and creaminess in one bite. It’s already a winner. But when you add in some crunch with graham crackers churned into the ice cream, you have a gold star winner in this ice cream. It is seriously my favorite summer ice cream. It beats this blackberry coconut ice cream from a few weeks ago. I couldn’t do just one serving.

You guys, we are in peak peach season and I have not shared any peach recipes with you. Eeek, I am failing this summer but in my defense, I’ve been out there having fun and making memories with my little one after him being sick for a period there. I’ve also been making old favorites like this strawberry peach ice tea and peach raspberry cobbler to enjoy the seasonal peaches. But it is time for a new peach recipe and this peach raspberry martini is the perfect adult beverage for your parties. Summer entertaining made easy with a homemade cocktail.

As you can tell, I love the combination of fresh, juicy peaches with sweet  summer berries. If you’ve not yet tried this combination, you need to as soon as possible. It’s a match made in heaven. I’ve had peaches with raspberries or blueberries in comforting cobblers, rustic galettes and now in a summer martini, and it is always amazing.

I recently tried Finlandia Vodka’s classic vodka and it inspired me to whip up this summer cocktail. There’s nothing more classic and refreshing than a vodka martini. Shaken, not stirred. Of course.

It’s been a while since I whipped up one. Martinis are fun to make at home for a crowd or a small dinner party.  I love setting up a cocktail bar with ingredients and encourage my guests to make their own cocktail. It would be helpful to have a few cocktail shakers and a variety of ingredients. For this peach raspberry martini, I used sliced fresh peaches, fresh raspberries, a hint of almond extract and simple syrup. Combine all the ingredients and shake with ice in a cocktail shaker.

This summer peach raspberry martini recipe is filled with fresh raspberries and juicy peach flavors. A refreshing summer cocktail that's easy to whip up.

Strain into a chilled martini glass and garnish with fresh peaches and strawberries. Easy peasy!!

You can use any fresh summer fruit to add variety to you cocktail bar. You could also infuse fruit and flavors into your simple syrup. For this recipe, I kept the syrup plain to highlight the peaches and raspberries.  There are so many ways you can customize your cocktails but start with this delicious combination of peaches and raspberries!

Peach Raspberry Martini

Ingredients:

4 ounces Finlandia Vodka

¼ cup sliced peaches

2 tablespoon raspberries

2 ounces simple syrup (or to taste)

dash of almond extract

Directions:

Chill two martini glasses.

In a shaker full of ice, combine half of the vodka, peaches, raspberries, simple syrup and dash of almond extract. Shake well and strain into chilled martini glass. Repeat with the rest of the ingredients for the second glass. Enjoy immediately!

After we ate the last of these s’mores cookie bars last week, I was craving some more s’mores!! Summer is still here and all this back-to-school talk is NOT going to make me not enjoy the last 6 weeks of this season. So I whipped up some S’mores chocolate chip cookies for more s’mores in our lives. You will thank me when you take a bite into these warm and gooey cookies.

These S'mores Chocolate Chip Cookies are ooey-gooey perfection with a graham cracker cookie base filled with chocolate chips and mini marshmallows.

They are just as easy to whip up too. Just 20 minutes prep, another 30 minutes to chill and you have yourself some summer camping cookies to enjoy!

The cookie dough incorporates graham cracker crumbs, mini marshmallows and chocolate chips. Every thing your s’mores should have is in this cookie.

These S'mores Chocolate Chip Cookies are ooey-gooey perfection with a graham cracker cookie base filled with chocolate chips and mini marshmallows.

I recommend eating this fresh and warm from the oven as the ooey-gooey center of melted marshmallow and chocolate is at the best. Share with a few friends and savor the rest of the summer days.

S'mores Chocolate Chip Cookie

These S’mores Chocolate Chip Cookies are ooey-gooey perfection with a graham cracker cookie base filled with chocolate chips and mini marshmallows.

Ingredients:

  • ½ cup (1 stick) unsalted butter, room temperature
  • ½ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup graham cracker crumbs
  • 1 teaspoon baking powder
  • 1 cup mini marshmallows
  • 1 cup chocolate chips

Directions:

  • Preheat oven to 350 degrees F. Line two cookie sheets with parchment and set aside.
  • In the bowl of an electric mixer, cream together the butter and sugar until well combined, about 3 minutes on medium speed. Add egg and vanilla extract and beat until combined.
  • Reduce speed to low and stir in flour, graham cracker crumbs and baking powder until just combined.
  • Stir in the mini marshmallows and chocolate chips.
  • Chill dough for at least 30 minutes up to 2 hours.
  • When ready to bake, scoop one tablespoon doughs and set 2-inches apart onto the prepared sheet.
  • Bake cookies for 10-12 minutes until golden brown on the edges. They will still be soft in the middle.
  • Let cookies cool on sheet for two minutes before transferring to a cooling rack.
  • Enjoy cookies immediately.
  • Store leftovers in an airtight container at room temperature.

Happy Friday friends! I have a no-bake pie for you today in the form of this Frozen Margarita Pie. It’s an oldie but a goodie. A sweet, creamy lime cheesecake filled with key lime juices and crunchy graham cracker crust. It’s a refreshing and delightful summer recipe that you need on your plate.

I first made this recipe four years ago as part of a cooking book club, Pass the Cookbook Club, hosted by Kita of Pass the Sushi. I miss those early days of blogging when we were all focused on meeting new people, learning new skills and baking up scrumptious recipes. It’s sad these days it all seems to be about the social chase, numbers and numerous platforms making it impossible to actually connect.
My first two years of blogging were the best and I met most of my blogging buddies then. I can’t imagine how newer bloggers are connecting and forming a community in all this chaos. (PS: If you are a newer blogger out there, reach out anytime!)

Hi friends! Happy Friday. I hope you all had a great week and an even better weekend planned. It is Mother’s Day weekend and I hope you are planning something special to celebrate the moms in your life. I’m going into the weekend with a batch of these mango macarons.

My husband’s family has experienced a lot of loss this past year and we are using this weekend to pay respect to some of our loved ones. From visiting Grandma’s graveside to spending Mother’s Days with my SIL who lost her 22-year old daughter mere months ago, we are making sure we take time to acknowledge that life’s seasons are not always happy. These seasons remind us of what really matters and appreciate time with our loved ones even more.

I have a complicated relationship with passion fruit and this passion fruit bundt cake is the first passion fruit recipe on the blog. It is one of my favorite tropical fruits, even more so than coconut and if you know me and my coco-loco self, you know it’s a LOT of love. However, despite my love for passionfruit, I’ve been staying away from it like the plague.

I was first introduced to passion fruit as an 8-year old (+/- 1 year or so) when my father brought the seeds home. My father was a plant biologist and loved experimenting with local and foreign plants. On a trip to Indonesia, he was introduced to passion fruit. He brought home to Sierra Leone the seeds with the hopes to propagate it there. Of course, passionfruit was not native to Sierra Leone but with similar climate and conditions, my dad was determined to have us try this gem. It was a fun experiment that I vividly remember helping with. From sowing the seeds to nurturing them to finally see the fruits, it was an exciting experience. (more…)

Happy Monday friends! I hope you are having a great start to your summer. It is definitely a great time of the year to slow down and enjoy quality time with the family. This peanut butter s’mores pie is a family favorite and one I make for BBQs and picnics. It’s always a hit and I know you will love it too for your gatherings.

Summer is also our favorite time to travel and explore. This summer we have a lot of small trips planned and I can’t wait to get started. Boston, DC, South Carolina and Philadelphia are all on my summer road trip list. We just returned from our one big trip of the year, Italy. It was an amazing whirlwind of a week as we tried to squeeze in Rome, Florence, and Venice in just 8 days. We loved every bit of it and especially all the sweet gelato we consumed. So so good. I’ll summarize our trip in upcoming posts but for now, you can see a few highlights on my Instagram.

Okay, back to this peanut butter s’mores pie. It’s a no-bake summer pie that’s bursting with all your s’mores flavors. A crunchy graham cracker crust is lined with melted chocolate. The filling of this pie is whipped peanut butter that is creamy and delicious. The pie is finally topped with a cloud of meringue topping that is the perfect sweet balance for a salty filling.

This pie is perfect for all your summer gatherings and one peanut lovers alike will fall in love with. The creamy whipped filling is complemented with the crunchy crust and a cloudy meringue. It’s also one that is easy to travel to backyard picnics. You can be that guest everyone is excited to see 🙂

Peanut Butter S'mores Pie 

Peanut Butter S'mores Pie

Ingredients:

INGREDIENTS:

FOR GRAHAM CRACKER CRUST

  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 8 ounces dark chocolate (I used Ghirardelli 60% Cacao)

FOR FILLING:

  • 1/3 cup heavy whipping cream, cold
  • 1 cup creamy peanut butter (not natural)
  • 8 ounces cream cheese, at room temperature
  • ⅓ cup whole milk
  • 1 teaspoon pure vanilla extract
  • ¾ cup powdered sugar

FOR THE MERINGUE TOPPING:

  • 1 cup granulated sugar, divided
  • ½ cup water
  • 1 tablespoon light corn syrup
  • 4 large egg whites

Directions:

TO MAKE THE CRUST:

  1. Preheat oven to 350 degrees F. Grease a 9-inch pie dish and set aside. Combine the graham crackers crumbs and melted butter in a large bowl. Mix until mixture looks like wet sand. Press into the bottom and sides of the prepared pie dish. Bake the crust until set, about 10-12 minutes. Transfer to a rack and let cool completely.
  2. Melt the chocolate in a heatproof bowl set over a simmering saucepan of water. Stir until smooth. Pour the chocolate over the crust and evenly spread using an offset spatula, going up the sides of the crust. Chill until chocolate sets, at least 10 minutes.

TO MAKE FILLING:

  1. Meanwhile, in the bowl of an electric mixer, beat the heavy cream on medium-high speed until soft peaks form. Transfer to a small bowl and refrigerate until ready to use.
  2. Clean the bowl and beat the peanut butter, cream cheese, milk and vanilla extract until smooth, about 2-3 minutes on medium speed. Reduce speed to low and add in the powdered sugar. Mix until combined.
  3. Using a rubber spatula, gently fold in half of the whipped cream until just incorporated and then fold in the rest. Spoon the filling into the cooled crust and smooth the top.
  4. Cover with plastic wrap and chill until set, about 3 hours or overnight.
  5. When ready to serve, make the meringue topping.

For the Meringue Topping:

  1. In a medium saucepan, combine ¾ cup sugar, water, and corn syrup. Bring to a boil over medium heat, stirring occasionally until sugar dissolves. Keep cooking, without stirring, until syrup reaches about 230 degrees.
  2. In the meantime, whip the egg whites in a large bowl with a stand mixer on medium-high sped until soft peaks form. Gradually add in the remaining ¼ cup sugar to egg whites with mixer running.
  3. When the sugar syrup reaches 230 degrees, remove from heat. With the mixer on low speed, carefully pour the syrup down the side of the bowl in a slow steady stream. (If you are using a hand mixer, get someone to do the pouring for you). Increase speed to medium-high and whisk until the mixture completely cools and stiff peaks form about 7 minutes. Add the lemon juice in the last minute. Use frosting immediately to top cooled and filled cupcakes.

You guys, I am not going to lie, this summer is flying by so fast. We are already halfway through June and I feel like I haven’t even started my summer bucket list. I just got back from back-to-back trips with one being Italy and I am still unpacking. Suitcases and laundry everywhere but we were able to fire up the grill over the weekend and started grilling all the things: beef kebabs, hot dogs, and burgers. Homemade burgers are just the best, as nothing beats a juicy loaded burger on a hot BBQ day. These Ranch Burgers were a recent favorite that my husband actually created.

Sometimes the hubs think he is a recipe developer and I should say he gets it right every now and then. This peanut butter chocolate pie was his idea a few years ago (lining the graham cracker crust with melted chocolate was insanely good) and he is still proud of it. When it comes to the grill, I gladly hand over the reins to him. Recently, he decided it would a great idea to dedicate a whole burger recipe to ranch flavor. I must say I am a fan as this ranch burger is incredible!! Let me break it down for you.

We picked up our favorite Hidden Valley ranch products from Walmart recently as we were planning a family get-together. I love getting a variety of salad dressings for toppings and everyone in our family loves classic Hidden Valley® Original Ranch® dressing. It’s great on summer side dishes like pasta salad, fresh veggie salads and also burgers. I also grabbed a few of the Hidden Valley® Dry Dips Packets for a quick dip to go with a vegetable platter (I love bringing these to last-minute picnics we are invited to). We also grabbed a roll of Glad® Press ‘n Seal® to keep all of our ingredients fresh. This stuff is perfect for covering up a to-go appetizer, too!

The hubs decided to use some of the dry dip in the burger meat. He makes his own patties most times so every now and then he experiments with flavors. This experiment paid off big time. It gave the burgers a true ranch flavor and it was amazing. Once cooked, I topped the burgers with the usuals (lettuce, tomatoes and red onions) along with some potato chips (optional) for the crunch factor and a drizzle of Hidden Valley Original Ranch dressing.

Seriously one of the best burgers we’ve made. You have to try it soon. They would be perfect for your next summer occasion and I am sure Dad would love it on his special day.

Talking about summer occasions, I can’t wait to get started on my bucket list and actually slow down to enjoy this nice weather. First up on our list is our annual strawberry picking right after another trip to Boston. Oiee, I’ve got to unpack.

Crunchy Ranch Burgers

These ranch burgers are bursting with flavor! Adding dry Ranch seasonings to the burger patties, these juicy burgers are perfect for your summer.

Ingredients:

For Burger:

  • 1 pound ground lean beef
  • 1 tablespoons of the content of Hidden Valley® Dry Dips Packet

Toppings:

  • butter-toasted sesame rolls
  • sliced cheese
  • fresh lettuce
  • sliced ripe tomatoes
  • sliced red onions
  • Hidden Valley® Original Ranch® dressing
  • A handful of potato chips

Directions:

  1. Season beef with Hidden Valley dry dips packet. Divide into 4 equal portions. Form each portion loosely into a ¾” thick burger.
  2. On a heated grill or medium saucepan over medium heat, cook the burgers until burger is no longer pink, about 6-8 minutes on each side.
  3. Top each burger patty with a slice of cheese and cook until just melted.  Remove from grill and place on bread rolls.
  4. Top the buns with a generous drizzle of Hidden Valley Ranch Original, lettuce, tomato and onions. Pile on the potato chips and top with the buns. Serve immediately.
  5. Serve immediately.
